Chocolate Town Cake

Cake
1 cup butter
1 cup sugar
1 cup packed light brown sugar
1½ teaspoon vanilla
3 eggs
2½ cups unsifted all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1½ cups semi-sweet chocolate mini chips

Cream butter, sugar, brown sugar, and vanilla until fluffy. Add eggs one at a time, beating well after each one. Combine flour, baking powder, and salt; add alternately with milk, beating after each addition. Stir in mini chips. Pour into a greased and floured 10-inch tube pan. Bake at 350º F for 60 to 70 minutes, or until tester comes out clean. Cool 15 minutes; remove from pan and cool. Glaze.

Glaze
2 tablespoons sugar
2 tablespoons water
1/2 cup mini chips

Bring sugar and water to a boil in a small saucepan; stir until sugar is dissolved. Remove from heat and add mini chips, stirring until melted.

Squash Supreme

2 pounds yellow squash
1 large carrot, grated
1 medium onion, diced
1 can cream of chicken soup
1/2 pint sour cream
1 package cornbread stuffing mix
1 stick butter

Boil squash until tender. Drain and mash. Sauté onion in a small amount of butter. Add squash; salt and pepper to taste. Add all other ingredients except stuffing mix and butter. Melt butter and mix with stuffing mix. Mix 2/3 of the dressing with the other ingredients. Pour mixture into a buttered casserole. Sprinkle remaining dressing over the top. Bake at 350º F for 30 minutes.

Potatoes, Green Peppers, Onions and Tomato Medley


3 large potatoes, peeled and sliced thin

1 large green pepper, peeled and sliced thin

1 medium onion, peeled and sliced thin

1 large fresh tomato, peeled and cut into cubes


In large electric skillet or frying pan add 1/3 cup of Crisco shortening. Warm oil and add all ingredients. Salt and pepper to taste. Cover and let fry until all ingredients are slightly brown. Stir with a spatula while turning ingredients over from the bottom. Eat while warm.

Jezebel Sauce


This recipe comes courtesy of our Alabama son-in-law's mother and has become a staple of our Thanksgiving dinner. It lends a bit of bite if you think turkey is too bland.

1 - 16 oz. jar pineapple preserves

1 - 16 oz. jar apple jelly

1/2 cup horseradish (recommended Kraft, in the dairy section)

3 tbsp dry mustard

1 tbsp black pepper


Combine all ingredients in a saucepan. Heat until jellies are melted. Pour into jars, refrigerate. Excellent on pork & poultry.
